Happy Easter from the Wicker Park Inn! We hope you’re having a lovely holiday weekend filled with friends, family, and spring time joy.
To celebrate, we wanted to share one of our current breakfast favorites: Chocolate Covered Peanut Butter Oat Cups! These are so popular amongst our guests that we’ve been making them a few times a month, and since many people have already asked for our recipe we thought we’d share it here as well.
These treats come together in under 20 minutes, the hardest part is waiting for the chocolate to harden before digging in!

Ingredients:
For the filling:
2 ¼ cups rolled oats
½ cup agave syrup (honey works as well!)
⅓ cup peanut butter
For the chocolate shell:
¾ cups chocolate chips
2 tsp coconut oil
1 tsp vanilla extract
This recipe is very customizable! If you’d like to add more mix in’s to your base (like dried fruits or other candies), you might need to adjust the amount of syrup + peanut butter to ensure it all holds together. The type of nut butter or chocolate is also open to change, but keep in mind the moisture content when making any changes!
Instructions:
Prepare a cupcake tray with liners for easier transport and cleanup. Combine oats, agave and peanut butter until the mixture holds together. Fill each cupcake liner about halfway and press the mixture down with the back of a spoon to form a solid base. Set aside to prep your chocolate topping.
Melt your chocolate chips and coconut oil in 30 second bursts to ensure it doesn’t burn. Once the chocolate is fully melted, stir in the vanilla (do not microwave your vanilla, it will ruin the taste!) Spoon melted chocolate onto each peanut butter cup, covering the tops completely.
While the chocolate is still wet, top each treat with your favorite additions! We love to add sea salt and coconut to ours, but the possibilities are endless: sprinkles, chopped nuts, dried fruit or your favorite candies would work as well!
Once all toppings have been added, set the cupcake tray into the fridge to set. This typically takes less than 30 minutes and once finished you can pop out the cups to share. These treats can be stored covered at room temp (or the fridge if you prefer the chocolate cold!) and keep for about five days.
